Yeah, it’s been one of THOSE WEEKS.

Although it is a slow cooker recipe, it will be ready in less than four hours, so a perfect lunch time dish on the weekend (or week day). I’m thinking perfect dish for the kids in the summertime for lunch.

I love switching up the basic flavor. Sometimes I make it using cheddar cheese or gouda or even pepper jack cheese to stimulate the tastebuds and conversation: ‘Man, are you sure this is mac and cheese?’ ‘ or ‘Wow, a little spicy tonight huh?’ ‘Man, what is this flavor, it tastes a little strong, but I LIKE it! Way to go mom!’ Thank you, thank you very much; just a little something I whipped up for my loved ones.
Yeah, now that I’ve eaten a bowlful some of this fantastic gluten free mac and cheese, I will head back to my mixing bowls, cake pans, oven and let the magic begin (again!).
- 1½ cups almond milk or any milk
- 12 oz evaporated milk
- ¼ cup melted butter, cooled
- 3 eggs
- ½ tsp salt
- 8 oz gluten free macaroni
- 3 cups shredded cheddar cheese
- In a medium bowl, whisk together milk, evaporated milk, butter, eggs and salt.
- Pour into a greased slow cooker.
- Add cheese and macaroni to slow cooker.
- Stir gently to combine.
- Cook on high for 30 minutes.
- Reduce heat to low and cook for 3 hours.

I survived on gluten free macaroni and cheese while in Ireland. It somehow became our go-to meal and also turned into the dinner we made after a long day hiking in the mountains.

Ingredients:
- 4 cups gluten-free penne pasta, cooked (or favorite pasta of choice)
- 1 cup whole milk (can use dairy-free milk if needed)
- 3 Tablespoons butter (or dairy-free butter substitute)
- 1 1/2 cup sharp cheddar cheese, shredded (or dairy-free cheese substitute)
- 1/2 cup shredded parmesan cheese
- 5-6 prosciutto slices, roughly chopped
- Freshly ground black pepper to taste
Directions:
- 1. In a large saucepan over medium heat add cooked pasta, milk, butter and cheese.
- 2. Stir until butter and cheese are fully melted. (Apprx 5 minutes)
- 3. Mix in prosciutto, leave on low heat for another 2-3 minutes.
- 4. Crush freshly black pepper, and serve immediately.
